Pumpkin Muffins

Ingredients:
- 1.5 cups cashews
- 1 heaped cup of chopped pumpkin (raw)
- 6 eggs
- 100g butter
- 100ml plain chicken meat stock
Method:
- Preheat oven 170c.
- Blend all ingredients in a Thermomix or high powered blender.
- Pour batter into muffin tray lined with muffin cups.
- Bake for 30-40 minutes or until well cooked, when muffins bounce back.
