Pumpkin Muffins

Ingredients:

  • 1.5 cups cashews
  • 1 heaped cup of chopped pumpkin (raw)
  • 6 eggs
  • 100g butter
  • 100ml plain chicken meat stock 

  

Method:

  • Preheat oven 170c.
  • Blend all ingredients in a Thermomix or high powered blender.
  • Pour batter into muffin tray lined with muffin cups.
  • Bake for 30-40 minutes or until well cooked, when muffins bounce back.
