Ingredients
1.5 litres of chicken stock (made from chicken carcass)
1 brown onion diced
1 clove garlic
2-3 florets of broccoli
1 head of cauliflower
1/4 cup butter
Method

Place carcass in a stock pot and cover with water an inch above the carcass.

Add salt, onion and garlic

Bring to the boil, then let simmer for 2 hours.

Remove the carcass

Add the broccoli and cauliflower and simmer until the vegetables are tender.

Add the butter and puree with a stick blender.
