Simple (and delicious!) Spag Meatballs
You will all know by now that I absolutely LOVE a very simple recipe- few ingredients, and even better if it can be made in one pot! What makes this recipe even better is that it is also cheap to make, such a winner!
Serves 4
Ingredients:

500g grass-fed beef mince

1 onion
-
4 cloves garlic
-
2 tablespoons mixed herbs

salt and pepper to taste

1 egg (or 2 whites- if you have leftover from your custard making!)

2 tablespoon butter for frying

300ml organic tomato passata
-
2 zucchinis
Method:

Finely chop onion and garlic (by hand or thermomix/food processor)

In a bowl (or thermomix/food processor), mix together the mince, onion, garlic, herbs, salt and pepper, and egg

Heat butter in a frying pan on medium heat

Roll the mixture into balls and add to pan, turning so they brown evenly
-
Add the tomato passata and let simmer for 15-20 minutes

Spiralise the zucchinis and set aside

Option- you can either add the zucchinis and stir through the meatballs at the end of the cooking time, or serve the meat balls straight on top of the raw zucchini (this is how I like it!)

Option- grate cheese on top, yum!
