Shepherd’s Pie (Veg Mash Topping)
Ingredients:
- 1 kg minced beef or lamb
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 1 zucchini, diced
- 3 cups cauliflower or pumpkin mash (instead of potatoes)
- 1 tsp dried thyme or rosemary
- Sea salt to taste
Instructions:
- Brown mince with onion, garlic, and carrots. Add zucchini, herbs, and salt, cook until soft.
- Spread into a baking dish, top with mash.
- Bake at 180°C for ~30 min.
- Cool, portion, freeze.
To serve: reheat in oven or covered pan.
