Shepherd’s Pie (Veg Mash Topping)

Ingredients:

  • 1 kg minced beef or lamb
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 zucchini, diced
  • 3 cups cauliflower or pumpkin mash (instead of potatoes)
  • 1 tsp dried thyme or rosemary
  • Sea salt to taste

 

Instructions:

  • Brown mince with onion, garlic, and carrots. Add zucchini, herbs, and salt, cook until soft.
  • Spread into a baking dish, top with mash.
  • Bake at 180°C for ~30 min.
  • Cool, portion, freeze.

 

To serve: reheat in oven or covered pan.
