Golden Spice Soup
This soup is bright, warming and super healing chock full of power-foods such as turmeric, cauliflower, onion and garlic. It is definitely the soup you want when you are feeling under the weather and just need a bright, colourful pick me up. And it tastes simply delish!
Serves - 6
Ingredients
2 tbsp ghee (or olive oil)
1/2 onion chopped
3 gloves garlic chopped
1 head of cauliflower broken into florets - approx. 5 cups
1 cup macadamia nuts or cashews
1 tbsp turmeric powder
6 cups of chicken stock
2-3 tsp of himalayan salt (to taste)
Juice of 1 lemon (to serve)
Method

Heat oil / ghee in a large soup pot over medium heat.

Add the onion, garlic, cauliflower, nuts and turmeric.

Saute for 10 minutes or until fragrant.

Add 4 cups of stock and salt.

Simmer until cauliflower and onion is soft.

Transfer the soup to a blender and blend into a creamy consistency (in batches if need be).

Return the soup to the pot and add the remaining 2 cups of stock if you need to thin it out.

Add a little more salt and a squeeze of lemon juice to serve. Top with a sprinkle of nuts or seeds and a few fresh herbs. Enjoy!
