Golden Cauliflower Cous Cous Recipe!
Cauliflower is much more versatile than most people think, yet we so often limit it to steamed or baked florets which can be totally BORING!!! We love to find new and interesting ways to incorporate cauliflower into our meals as it is such a nutritional powerhouse which is awesome for maintaining good gut health.
This recipe is a quirky take on traditional cous cous, replacing the cracked wheat with cauliflower rice and combining it with the delicious, golden spice of turmeric and the freshness of mint and lemon, it goes so well with chicken or fish dishes and a dollop of tangy yoghurt!
Ingredients

1 large cauliflower, cut into florets

2 tbsp ghee (or olive oil)

4 spring onions

2 garlic cloves, crushed

2 tsp of ground turmeric
-
2 tsp of ground coriander
-
2 lemons, zest finely grated and juiced
-
1/2 cup of chopped natural almonds or macadamia nuts
-
1/2 bunch of mint or coriander, leaves chopped
-
roughly

1 tsp salt to taste
Method
Using a food processor, pulse cauliflower florets to a fine consistency similar to that of cous cous.

Heat ghee / oil in a large wok or frypan over medium heat.

Add spring onions (chopped), garlic, and spices and cook for 1-2 minutes - until fragrant.

Add finely chopped cauliflower and cook for 5 minutes, stirring regularly, until cauliflower is just tender.

Season to taste.

Remove from heat and set aside to cool for 20 minutes before stirring through the lemon juice and zest, and topping with nuts and fresh herbs.

You might want to add a final burst of lemon juice just prior to devouring for some extra tang. Enjoy!
