GAPS Friendly Lemon Curd

Delicious foods don’t need to be filled with unnecessary processed ingredients, and this Lemon Curd recipe is the perfect example of this!

 

Ingredients:

4 eggs

80g honey

2 lemons, juiced

100g butter, diced

 

Method:

Thermomix method:

Add eggs and honey to thermomix

Insert butterfly, cook 4 min/80 degrees/speed 2

Then set to 4min/varoma/speed 2, and whilst cooking add lemon juice and slowly add diced butter

Check that the curd has thickened well, you can cook for a further 2min/varoma/speed 2 if you would like it thicker

Pour into ramekins or into a jar and chill.

 

Stovetop method:

Bring a pot of water to the boil

Add eggs and honey to a metal bowl, turn the water down to a simmer and hold the bowl in the pot of water

Whist the egg and honey until it starts to thicken

Add lemon and whisk well

Turn the heat up to medium, whisk the mixture whilst adding the butter slowly, continue to whisk until the mixture is bubbling and thickening up - this can take a little while!

Pour into ramekins or into a jar and chill.
