Brassica Soup

When the winter weather sets in, there is nothing like a nourishing soup - the perfect comfort food to warm you up from the inside out. Containing broccoli and cauliflower, this soup contains nutrients which support liver detoxification processes. Furthermore, meat stock provides collagen and gelatin, which contribute to gut health by strengthening the intestinal lining, reducing inflammation, and promoting the growth of beneficial gut bacteria.

An ideal choice to cozy up with during the winter season.

 

Ingredients

  • 2 heads of broccoli, florets roughly chopped

  • 1 head of cauliflower, florets roughly chopped

  • 2 tablespoons of good quality fat (lard, tallow, ghee, duck fat or coconut oil)

  • 1 onion

  • 4 cups of homemade chicken stock

  • Sea salt to taste

 

Method

In a large saucepan bring the broth to the boil. Add chopped broccoli, cauliflower, onion and fat.

Cook for a further 15 minutes.

Add sea salt to taste.

Blend with a stick blender or in a food processor until smooth. Pour back into the saucepan for reheating if needed.

 

Variation - add coconut milk prior to blending.
